Vegetable Korma

Ingredients
- 2 tbsp cooking oil or ghee
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric powder/haldi
- 1 pinch asafoetida
- 1 sprig curry leaves
- 2 tsp salt
- 1 tsp crushed ginger/ginger paste
- 1 tsp crushed garlic/garlic paste (optional)
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 2 cups mixed vegetables
- 2 cups yoghurt
1 tbsp South Indian Korma Masala
- 1/4 cup chopped coriander leaves
Directions
Tempering
- Heat oil or ghee in a pot
- Add mustard seeds and cumin seeds, wait until they crackle
- Add asafoetida, curry leaves and turmeric powder
Main Dish
- Add chopped onions and salt. Saute until onion turns translucent
- Add crushed ginger/ginger paste and crushed garlic/garlic paste (optional)
- Add chopped tomatoes. Saute until tomatoes turn soft and mushy
- Add 1 tbsp Spice Tree Korma Masala
- Add whisked yoghurt and mix well
- Add mixed vegetables and cook until done
- Garnish with chopped coriander leaves
- Serve hot with rotis or rice
