Ingredients
- 400g basmati rice
- 6 cups of water
- 2 sliced medium onions
- 2 slit or finely chopped green chillies (optional)
- 1 tsp crushed garlic/garlic paste
- 1 tsp crushed ginger/ginger paste
- 1/2 cup chopped mint leaves
- 1/2 cup chopped coriander leaves
- 4 tbsp ghee or cooking oil
- 4 tbsp plain yoghurt
- salt to taste
- 2.5 cups mixed, chopped vegetables (potato, carrot, beans, peas etc.)
- 2 whole bay leaves
- 2 sticks cinnamon
- 4 cloves
- 4 green cardamom
- 1 tsp black pepper corns
- 2 star anise
- 2 tsp shahi jeera (caraway seeds)
- 1 tbsp lemon juice
- 1.5 tbsp Spice Tree Biryani Masala
- 10 g fried onions
- 1 medium sliced tomato
- 2 tbsp finely chopped onion
- 1/2 cup finely chopped cucumber
- 1/2 cup finely chopped tomato
- 1 tbsp chopped coriander leaves
- salt to taste
- 2 cups yoghurt
- 1/4 cup water or as per required consistency
Raita
Directions
Preparation 1
- In a pot of water, soak washed basmati rice together with 1 bay leaf, 1 inch cinnamon, 2 cloves, 1 star anise, .5 tsp black pepper corns and 1 tsp shahi jeera for 15 minutes
Preparation 2
- Add yoghurt, Biryani Masala, lemon juice, salt to mixed vegetables in a bowl and keep aside
Main dish
- Heat 3 tbsp oil or ghee in a pot
- Add 1 bay leaf, 1 inch cinnamon, 2 cloves, 1 star anise, .5 tsp black pepper corns and 1 tsp shahi jeera and saute for just 30 seconds
- Add sliced onions, chopped green chillies and salt. Saute until onions turn light golden
- Add crushed garlic/garlic paste, crushed ginger/ginger paste, 1/4 cup chopped mint leaves and 1/4 cup coriander leaves. Saute for a minute
- Add prepared vegetable mixture. Cook until vegetables are soft and simmer
- Meantime, place pot of soaked rice and whole spices to cook. Add salt and cook until rice is 3/4 cooked. Remove from heat and drain water.
- Place sliced tomatoes, fried onions over vegetables. Spread 3/4 cooked rice on top, evenly.
- Pour 1 tbsp ghee over the rice, add fried onions, 1/4 cup chopped mint leaves and 1/4 cup coriander leaves
- Simmer for 10 minutes and serve hot vegetable biryani with raita.
Raita
- Mix salt, chopped onions, cucumber and tomatoes to yoghurt. Add water as per required consistency and mix well. Garnish with chopped coriander leaves and serve with hot biryani.
