One Pot Biryani

This Biryani Masala is made in Wellington using a highly treasured recipe, passed down through generations! A combination of more than a dozen premium quality spices - all batch roasted by hand and freshly ground, right here in Wellington.

Ingredients

1 Cup Basmati Rice
-
1 Medium Onion, Sliced

1 Medium Potato, Small Diced

2 Medium Carrots, Small Julienne

½ Cup Green Peas
-
For Chicken or other Meat Biryani - 250g Meat (preferably with bones)

2 Tbsp Cooking Oil
-
¼ Cup Finely Chopped Coriander Leaves
-
¼ Cup Finely Chopped Mint
-
1 Tsp Garlic Paste
-
1 Tsp Ginger Paste
-
¼ Cup Whisked Yoghurt
-
3 Tsp Salt
-
2 Cups Water
-
1 Tbsp Spice Tree Biryani Masala
-
2 Small Sticks of Cinnamon
-
4 - 5 Whole Cloves, 1 Tsp Cumin Seeds

4 Green Cardamom Pods
Optional
Directions
Heat Oil in a pot - Medium heat.
Add sliced Onions and 1 Tsp Salt, stir well.
If using optional items, add all of them.
Add half the quantity of chopped Coriander and Mint Leaves, mix well and sauté until onions turn translucent.
Add Garlic and Ginger Paste and mix well. Cook for 1 - 2 minutes.
Add 1 Tbsp Spice Tree Biryani Masala and mix well.
Add Whisked Yoghurt and stir through well.
Add Vegetables, 1 Tsp Salt and mix well. Cook for 4 - 5 minutes.
For Chicken or other Meat Biryani - Add Meat.
Add 2 cups of Water.
Add 1 cup of Basmati Rice and mix well.
Close lid and cook on medium heat until rice is done. Rice is considered ‘done’ when the rice grain/s can be crushed easily.
Add remaining chopped Coriander and Mint Leaves and mix well.
Serve hot with Yoghurt, Cucumber, Tomato Raita!
